The Easiest Gluten Free Cast Iron Skillet Pizza (Vegan Option)

What do you get when you combine the easiest gluten free pizza recipe with a cast iron skillet? A 30-minute pizza dinner that will have lovers of crispy or thin crust pizza drooling! 

I’ve shared several homemade gluten free pizza crust recipes in the past, ranging from my favorite buckwheat pizza crust to my sweet potato pizza crust. But with the craziness of grad school, blogging and, well, adulting, I haven’t had the time lately to whip up a gluten free pizza from scratch...which is where this gluten free pizza in a cast iron skillet comes in.

The Easiest Gluten Free Cast Iron Skillet Pizza (Vegan Option)

Thanks to the cast iron skillet, the gluten free pizza’s tortilla base is super light and crispy. Meanwhile, the pre-sautéed veggies are soft and tender, and everything is held together with some gooey (dairy free or otherwise) cheese. As a bonus, this cast iron skillet pizza can also easily be made vegan if you ditch meat for beans or tofu for protein. If you use a paleo tortilla (like these cassava tortillas!) and dairy free cheese, you can even whip up a paleo pizza in thirty minutes or less!

And for those who don’t have a cast iron skillet, I have good news. I’ve tested cooking this gluten free pizza recipe using just a baking tray and foil as normal, and it was still da’ bomb. It won’t get as crispy as a pizza in a cast iron skillet does, but your gluten free pizza will still be just as fast and tasty. 

Ingredients for One Gluten Free Pizza in the Cast Iron Skillet:

Ready to get your allergy-friendly pizza party started? Gather the following ingredients for one pizza.

This will make enough for one large serving or two smaller servings:

1 gluten free/vegan/paleo tortilla of choice (I’ve found that Food for Life’s gluten free and vegan rice tortillas get super crispy in the cast iron skillet!) 
Vegetables of choice, sliced thinly (I use zucchini, squash, radishes and spinach)
Pizza sauce of choice (I love my seed-stuffed pesto or radish greens sauce
Protein like salmon, chicken, pepperoni, black beans, chickpeas, tofu, etc. 
Cheese of choice (I enjoy Daiya)
Spices like thyme and oregano 

How to Make Your Cast Iron Skillet Pizza:

Because you won’t be cooking your gluten free pizza in the oven for very long, I typically sauté my sliced veggies in a skillet for six minutes or until they’ve started to cook through but still have a lil' crunch. If you are using fewer, pre-cooked or more quickly cooked veggies, you can skip this step. 

Either way, you should preheat your oven to 400 degrees Fahrenheit and gather your tortilla and other ingredients. This is an especially easy (delicious) and fast gluten free dinner recipe if you have a bunch of leftovers - ranging from homemade vegan cheese sauce to roasted veggies to cooked proteins - that need using up, so don’t be afraid to make this a “clean out the fridge” kind of pizza!

Once your veggies have just a little bit of crunch left, remove then from heat and start building your cast iron skillet pizza. Place your tortilla in the cast iron skillet and layer on your sauce, spices and various toppings. If you want a super crispy gluten free pizza, the secret is not overloading your pizza with too much sauce and dabbing your sautéed veggies (to remove extra moisture) before you add them to your pie. 

After you’ve added all of your toppings, pop the cast iron skillet pizza into the oven and cook it for 15 to 20 minutes, or until the edges of your tortilla have browned, your veggies are completely cooked through and your cheese has melted. To help your gluten free vegan pizza cook evenly, rotate the cast iron skillet halfway through the cooking time.

After you’ve cooked up your best gluten free pizza, it’s time to dig in! I often eat mine right out of the cast iron skillet - just remember that the pan will be hot. (Let’s not talk about how many times I’ve almost burned myself by forgetting the handle is still warm). Personally, I like to serve my cast iron skillet pizza with a side salad of mixed greens and lemon juice or apple cider vinegar for a hit of acid, but you do you! 

As you’ve probably realized by now, this gluten free pizza recipe is intended to be personalized to your individual taste buds (and dietary restrictions). Able to eat dairy and love meat? Use whole milk mozzarella and traditional pepperoni. Have a bunch of sweet potato wedges and zucchini that need using up? Make a potato and zucchini pizza worthy of a 4-star restaurant!
